Just the aroma while the bread is baking can warm your heart and get you excited to slice the first piece fresh from the oven. Try this recipe and once you do, your family and friends will be so grateful if they are blessed with a gift of your healthy fresh made bread:
Very Berry NingXia Red Bread
Combine:
- 3/4 cup brown rice flour
- 1-1/4 cup barley flour
- 1 teaspoon baking powder
- pinch of sea salt
Add:
- 2/3 cup Blue Agave

- 2 bananas, lightly mashed
- 1/2 cup wolfberries or blueberries
- 1/3 cup unsweetened applesauce
- 1/2 teaspoon vanilla
- 5-6 tablespoons NingXia Red
- 2 eggs
- 1/3 cup canola oil
While you are preparing this recipe, it’s always nice to have a glass of NingXia Red to sip on while working. You get all the added benefits of super anti-oxidants. How great is that!!
Beat ingredients on medium-high until well combined. Pour batter into prepared bread loaf pan and put in oven on the middle rack. Bake for 1 hour, until slightly dark on the edges and golden on the top. Use a knife around the edges of the pan, then wait 5 minutes and turn out onto a paper towel. Place bread on serving plate.
Glaze
While the bread is baking, put 1/2 pint of cream and a spoonful of Blue Agave in a small sauce pan. Stir well, cook on medium heat until it comes to a boil, then lower to a simmer. Stir often until it is a light caramel color. Avoid overcooking. Remove pan from heat. Pour glaze over bread, slice, and serve.
For gifts, let the bread cool and wrap in festive colored saran wrap. Or when guests are over, have slices of bread available for everyone to enjoy.
