It is so fun to have new recipes and to add them to your recipe file. What is even better is to be adding recipes that are yummy and healthy to eat. Here is a delicious cookie recipe with NingXia Wolfberry/Goji Berries that are a source of anti-oxidants. This is a nice gift during the holidays or anytime throughout the year ; 
Wolfberrry Cookies
- 1/3 cup diced dried apricots
- 1/2 cup wolfberries or raisins
- 1 egg
- 1-1/2 cups rolled oats
- 1-1/2 cups whole-wheat flour
- 3 tablespoons natural, unsweetened apple juice
- 5/8 cup Blue Agave
- 1/4 cup fractionated coconut oil
- 1/4 cup unsalted butter
- 1 pinch of sea salt
- 1/3 cup raw cashews, unsalted
- 1/2 teaspoon baking powder
Preheat oven to 350 . Soak apricots and wolfberries or raisins in apple juice. Cream butter and coconut oil in mixer, add egg, Blue Agave, and sea salt. Cream until fluffy. Add flour, baking powder and oats. Mix until blended. Mix in cashews, apricots, and wolbferries or raisins (do not drain). Spray a light coat of non-stick spray on baking sheet. Place rounded teaspoons of cookie dough onto baking sheet.
Bake 8-10 minutes, until cookies melt and are light brown in color.
Enjoy the aroma while these Wolfberry cookies are baking and I hope you think they are tasty too.
